Indian Style Pasta Recipe

Pasta is a traditional Italian cuisine which comes in many varieties. Pasta can be made durum wheat flour mixed with water or eggs. Rice flour can also be used to make pasta instead of wheat flour. Semolina can be used to make pasta. Pasta can be cooked for light lunches, breakfast or dinner as well. Pasta sauces can vary in taste, color and texture. Pasta can be served hot or cold. Sauces can be of different varieties like tomato sauce, white sauce and etc. Pasta comes in different shapes such as long shape, short shape, flat and sheets.

This recipe will give a twist to traditional Italian Pasta with Indian spices and vegetables.



Ingredients:

1. 1 ½ cups of pasta mainly Penne or Macaroni
2. 4 cups of water for boiling
3. 2 medium sized tomatoes.
4. 2 green chilies chopped.
5. Tomato sauce as you like.
6. 1 tsp of cumin seeds(jeera)
7. 1 medium Onion sliced and cut into half
8. ½ cup of peas(skip if you don’t like)
9. Salt to taste
10. 3-4 tsp of oil
11. ½ tsp of red chili powder.
12. 1 tsp of chopped green coriander.

Step 1: Boiling of Pasta

1. Take a big pan and place it on stove, turn on the stove and put 4 cups of water.
2. Keep the flame on high and boil the water.
3. Once the water start boiling, add 1 tsp of oil and ½ tsp of salt to it.
4. Now add 1 ½ cups of pasta and stir it well.
5. Let it boil for 10 mins till pasta is cooked well.
6. When cooked well strain it and wash it with cold water, then keep it aside.


Step 2: Sauce preparation

1. Take a kadhai and heat it up on medium flame.
2. Put 3 tsp of oil into the kadhai.
3. Once the oil gets heat up add cumin seeds and let me crakle.
4. Now add green chilies and onions, stir fry them for 5 mins.
5. Now add tomatoes, mix well and a pinch of salt and cover it with lid for 5 mins till gets mushy.
6. Remove the lid and give it a stir and add peas fry them for 5 mins.
7. Mix everything well and then add pasta to it.
8. Mix pasta well and now add tomato ketchup/sauce then stir it well.
9. Add salt as you like and ½ tsp of red chili powder.
10. Mix it again and garnish it with chopped green coriander. 
11. And Indian Style pasta is ready to serve.




This recipe is really easy to cook and also a good appetizer. You can cook it for any meal like breakfast, lunch or dinner. Pasta goes well in any meal. Sabudana Khichdi Recipe

Sabudana Khichdi is a made from soaked Tapioca pearls. This dish is very popular in western parts of India like Gujarat, Maharashtra, Rajasthan, and Madhya Pradesh. Sabudana Khichdi is also a part of diet when someone is on fast like any Navratri, Shivratri and any Hindu religious occasion. This is also served as a street food in some cities of India like Indore, Bhopal, Pune and Nagpur. This dish is very easy to cook and it can be cooked as breakfast, lunch or dinner.

Let us see how the complete recipe is.

Ingredients:

1. 1 ½  Cup of sabudana(Tapioca Pearls) 
2. 2 green chilies chopped.
3. 1 cup of peanuts.
4. 2 medium sized potatoes(diced)
5. 2 medium sized tomato(diced)
6. 2 tsp of cumin seeds.
7. 2 tsp of coriander chopped.
8. Salt to taste.
9. Water to soak sabudana.
10. 2-3 tsp of oil.







Preparation:

1. Take a big bowl and put 1 ½ cup of sabudana into it.
2. Add 1 ½ cup of water into it and sabudana should be completely be soaked in water.
3. Leave it for overnight, you can also soak it for 5-8 hours as required.


Method of cooking:

1. Take a kadai and heat it up on stove.
2. Put 2 tsp of oil into kadai and heat it up.
3. Put 1 cup of peanuts and fry them about 5 minutes and then take them out, keep it aside.
4. On the same oil, put 2 tsp of cumin seeds and let them crackle.
5. Now add chopped green chilies and fry it for a minute.
6. Then add potatoes fry them for a minute and add tomatoes.
7. Place tomato and potato on the other side of kadai and put a pinch of salt to it.
8. Cover the kadai with a lid and cook them till potatoes become soft and tomatoes get mushy.
9. Keep checking potatoes and tomatoes in every 2-5 mins.
10. Remove the lid and now mix tomatoes and potatoes well.
11. There goes soaked sabudana and fried peanuts and mix them well.
12. Add a tsp of oil to it and salt to taste, then mix it well.
13. And garnish with green chopped coriander.



Healthy benefits:

Sabudana is a good source of carbohydrates and some proteins. Adding peanuts to it adds Protein quantity which makes it a balanced diet.

Pinwheel Samosa

Pinwheel samosa is perfect evening snack and also a starter for a home party. It is twist to traditional Indian samosa, pinwheel samosa are attractive and unique. Samosa is very popular in north India but it has been liked by all Indians. Traditional Samosa is in shape of a triangle, but this samosa which I am going to share will have a circular side like a wheel. The stuffing is basically of boiled potatoes and mixed spices. But you can try your own new twist to the samosa. This recipes will serve 2-3 people.



Ingredients:

1. 2 cups of Maida(all-purpose flour)
2. 4 medium sized boiled potatoes.
3. ½ table spoon of Cumin seeds.
4. 1 table spoon of coriander seeds.
5. 1 table spoon of chopped green chilies.
6. 2 table spoon of chopped green coriander.
7. 1 tea spoon of turmeric powder.
8. 1 tea spoon of red chili powder.
9. 1 tea spoon of amchur/dry mango powder
10. 5 curry leaves
11. 1 tea spoon of cumin powder.
12. Salt to taste
13. 1 tea spoon of Ajwain seeds
14. And Oil to fry
15. Water to knead the dough

Preparation:

Stuffing preparation:

1. Take a pan and pour 2 tsp of oil to frying the potatoes and spices.
2. Add cumin seeds and coriander to it, let them crackle for 30 secs.
3. Then add green chilies and curry leaves, then sauté for a minute, after that add turmeric powder and stir.
4. Now add boiled and peeled potatoes and mash the potatoes finely.
5. At this stage add red chili powder, amchur powder, cumin powder and salt to taste.
6. Mix everything properly and remove it from the stove.


Dough preparation:

1. Take a big bowl and add 2 cups of maida.
2. Then add a pinch of salt and ajwain to it.
3. And add 1 tsp of oil to it.
4. Slowly add water and start kneading it.
5. The dough should be soft and keep it aside for 10 min.


Method:

1. Take a ball of dough and start rolling it, roll it into a big chapatti.
2. Then take 2 spoons of stuffing and spread it evenly all over the chapatti.
3. Now once the stuffing is spread, start rolling the chapatti from your side with your hand.
4. And once the whole chapatti is rolled. Then cut it into even thick slices.
5. Take a bowl and add some Maida and some water to make a thick batter.
6. Remove all the slices, take one at a time and press it with your hands  likewise do this will all.
And keep aside.





How to fry Pin wheel samosa:

1. Take a big pan or kadhai and pour enough oil to fry.
2. Let it heat up.
3. Then take one pinwheel and dip it into maida batter both sides and put it into the oil.
4. Likewise do this with all pinwheels and the flame should be low-medium.
5. Fry them till they get golden brown in color and cook them both sides.
6. Once fried, remove them on a paper towel.




Serve it hot with green mint chutney or tomato ketchup. This is a perfect snack for evening tea.

Sabudana Vada A Perfect Snack

Sabudana made from the starch extracted from cassava roots and also known as Tapioca Pearls.



Ingredients required:

1.    A cup of sabudana, soaked for about 4-5 hours.
2.    2 medium sized boiled potato.
3.    A cup of roasted peanuts.
4.    A table spoon of cumin seeds
 
5.    A tea spoon of black pepper
6.    Oil to deep fry(refined oil)
7.    Salt to taste
8.    A full table spoon of green chilies
9.    A cup of coriander

Preparation and Method:

1.    Remove the excess water from soaked sabudana.
2.    Removed the peel of potato.
3.    Dry roasted cumin seeds and black pepper and grind them coarsely.
4.    Finely chopped the chilies and coriander
5.    Remove the skin of peanuts, after roasted.
6.    Take a large bowl, put boiled potatoes, sabudana, ground cumin, black pepper, peanuts, and add salt to taste.
7.    Mix all the ingredients thoroughly, to make the patties.
8.    Take small portion of the mix, make a ball and press it gently, smoothen the sides of the patties.
9.    Likewise make all the patties.




How to fry these Patties:

1.Take a Kadhai or frying pan that you have, put it on the gas stove and turn the flame on medium.
2.Drop the oil about 250 ml enough to deep fry, once the pan is hot.
3.Put your palm about 15 cm above the pan, if you feel the hotness then oil is ready for frying the Vada.
4.Slowly put 4 to 5 Vada at a time, flame should be on medium, frying it one side till it gets golden brown.
5.Then flip them to the other side and fry till they get golden brown other side as well.
6.Likewise follow the same method until all the Vada are fried, remove them from pan and place them over a paper towel on a plate.
7.Sabudana vadas are ready to eat, they goes best with green mint, coriander chutney and a cup of milk Tea.

Poha Recipe For Perfect Healthy Breakfast


Poha is made from the flattened rice (also known as Chura), traditional breakfast dish of Madhya Pradesh and Maharashtra (known as Pohe). Indori Poha is famous in Indore and eaten with Jalebi as breakfast. In Maharashtra, poha is cooked with lightly fried mustard seeds, turmeric, green chilies, finely chopped onions, fried peanuts and then moistened poha is added to the spicy mix and steamed for a few minutes. This recipes will include for two persons. 

Ingredients required:

1. 250 gms of Poha (thick).
2. 100 gms of peanut
3. 1 medium size onion finely chopped.
4. 3 green chilies chopped
5. 1 medium tomato chopped
6. 5- 10 curry leaves.
7. 1 table spoon of chopped coriander
8. ¼ table spoon of turmeric powder
9. ½ table spoon of cumin seeds
10. Salt to taste.
11. Some chickpea sev
12. 3 table spoons of oil(Soyabean Oil)

Preparation and Method:

1. Take a strainer or any container, wash poha twice and strain all the water and keep aside till it gets moist not too soft.
2. Till poha is getting moist, take a kadhai or pan, put 3 table spoons of oil and fry peanuts till they get crunchy on medium flame.
3. Take out the peanuts and then put ½ table spoon of cumin seeds, when they start crackling add green chilies and onion.
4. Saute till onion gets golden brown in color then add curry leaves and let them cook for 30 seconds in medium flame.
5. Then add chopped tomato and cook it completely till it loses all juice and oil gets separated on the corners.
6. Add ¼ table spoon spoon of turmeric and mix it well.
7. Add the soaked poha and mix everything properly, then add peanuts and mix them.
8. Lastly add salt to taste, and coriander and mix well.
9. Serve hot on a plate with some chickpea sev on top of poha.
10. Enjoy Poha with hot tea.
